Default Prepping for my first engine rebuild

I have a mach 427 that I'm rebuilding. I have a new piston and sleeve coming as well as a head gasket. Is there anything else that should be replaced since I'm in there?

Anything that needs to be done differently to break an engine in during winter.. 30-50 degree temps.

You might want to pull the carb needles an check the o-rings,I always put a small amout of
lube on them like syliglide, that helps the o-rings from crackin an drying out,it also helps
    sealing them from leaking...
    Just bash it!..
